Did someone say Pancake Day is coming up? Time to load up on our favourite carb! Though we always think pancakes are a decedent treat we can only have occasionally, they can be healthy. Because I like you...I’ll share my secret recipe to a healthier version of them but with twice the taste!
First things first, breakup a banana into a blow and crush it with a fork until it becomes a thick paste (it looks yuck, but bear with). Then, you’ll want to take one medium egg and crack that into the same bowl stirring till it combines with the banana. I like to add a little bit of milk at this point just for that extra bit of moisture but it’s totally optional!
So, you have the liquids, now the rest! Instead of the main thickening agent being flour, I use oats instead. Add as many as you want! I usually do a small cup worth, but you can add as little or as much as you like until the mixture thickens. Then, add a tablespoon of self-rising flour just to help lighten the mixture! And that’s it...if you couldn’t tell, I hate measuring so it’s completely intuitive. Once that’s all been added, it should have the consistency of a pancake mixture with no added sugar and a fraction of the carbs! If you are like me and like to make pretty large pancakes, this will make roughly two or three.
For toppings, I love to add a tablespoon of yoghurt, a drizzle of honey and a handful of berries. Safe to say it tastes like an absolute treat and fills you up till your next meal!
If you aren't a fan of pancakes, then why not try French toast instead! It’s easy only needing eggs and bread (I use Brioche). All you have to do is whisk an egg with either salt/pepper or sugar/cinnamon into a small tray, coat both sides of the bread slices in the egg and place on a medium heat pan which has been buttered. Toast the bread on each side for 2-3min until golden brown. Plate the French toast and top with anything you like!
